We know a lot of people, ourselves included, who are wary of cooking fish. It's not cheap, and it's easy to mess up, leaving you with the double whammy of a meal that's expensive and disappointing. But these four recipes use simple techniques and big flavors that look almost foolproof. Plus, one uses brown butter. That always spells success.

Ingrédients (pour 4 personnes) :
- 250 g de riz thaï
- 20 cl de lait de coco
- 10 tomates cerises
- 500 g de crevettes roses
- bouillon (50 cl eau + cube aux herbes)
- huile d'olive
- 2 cuillères à soupe de sauce soja
- 1 cuillère à café de gingembre
- 2 cuillères à soupe de cassonade
- 1 bouquet coriandre fraîchePréparation :
Dans une poêle à feu moyen, mettre un bon filet d'huile d'olive et ajouter le riz.
Quand le riz est translucide, ajouter les crevettes décortiquées et coupées en rondelles et les tomates coupées aussi en rondelles. Saisir rapidement.Ajouter le lait de coco et la moitié du bouillon. Réduire à feu doux.
Ajouter le gingembre, la cassonade et la sauce soja.Ajouter le reste du bouillon petit à petit jusqu'à cuisson du riz et consistance crémeuse.

Laure's Dream Dinner Party
The Scene: An outdoor balcony or courtyard somewhere in France (no need to get too specific here) though the fantasy is based on time spent in the south of France where each night dinner was served under a canopy of vines with the sun setting beyond. Hours went by, bottles of wine were emptied and a good time was had by all.
The Time: Summertime and just as the sky is turning a deep blue. Because it's summer it will stay like this for hours.
The Table: A rustic and hearty wood table with gashes and wax and stains. Plain linen napkins, very good wine glasses, Duralex glasses for water and plain white dishes. Perhaps for some flair, the utensils will be from Claude Lalanne.
The Decor: Other than lanterns in some trees, candles on the table and some beautiful flowers, nothing over the top. The setting can speak for itself.
The People: Family and friends past and present with an ever expanding table and limitless time so that there's time to talk with everyone.

This savory pancake is very filling and so easy to make; a little batter, some scallions, a mix of your choice of seafood, a little dipping sauce, and you have a full meal. Serve with a little miso soup or kimchi.
